(Brewers of Siloam Springs) purchased a <a href=\"http:\/\/fourrosesbourbon.com\/\" target=\"_blank\">Four Roses<\/a> Bourbon barrel.\u00a0 The plan was to brew 50 gallons of an imperial stout and put in the barrel for a bit of aging and soaking up the luscious bourbon and oak flavors. None of us had ever performed this operation before!\u00a0 We learned a lot!<\/p>\n<p>Early in 2014, we all brewed various amounts of the <a href=\"http:\/\/www.socpsy.com\/casks\/wp-content\/uploads\/2015\/04\/barrel_project.jpg\" target=\"_blank\">imperial stout using the same recipe<\/a>. The plan was for a brew that had an OG of about 1.100 and a FG of about 1.020.\u00a0 We pitched two packets of <a href=\"https:\/\/www.wyeastlab.com\/hb_yeaststrain_detail.cfm?ID=4\" target=\"_blank\">Wyeast London Ale (1028)<\/a> for primary.\u00a0 We pitched an additional packet of <a href=\"http:\/\/www.fermentis.com\/wp-content\/uploads\/2012\/02\/SFA_S04.pdf\" target=\"_blank\">Fermentis S-04<\/a> in the secondary.\u00a0 My brew didn&#8217;t quite make it up to our projected numbers (OG=1.093; FG=1.026 for an 8.9% ABV).<\/p>\n<p>On May 17, we met in the basement of <a href=\"https:\/\/www.facebook.com\/28Springs?fref=ts\" target=\"_blank\">28 Springs restaurant<\/a> and we siphoned the stout out of our respective fermenters\/kegs into the barrel.\u00a0 James Spencer of <a href=\"http:\/\/www.basicbrewing.com\" target=\"_blank\">Basic Brewing<\/a> was on hand to record a <a href=\"http:\/\/traffic.libsyn.com\/basicbrewing\/bbr05-29-14bossbarrel.mp3\" target=\"_blank\">Basic Brewing Podcast<\/a> about the project.\u00a0 We had agreed ahead of time that we would sample each contribution and determine if it was worthy of being added to the barrel.\u00a0 No <a href=\"http:\/\/www.socpsy.com\/casks\/wp-content\/uploads\/2015\/04\/14572950665_aa2faba482_q.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" size-full wp-image-596 alignright\" src=\"http:\/\/www.socpsy.com\/casks\/wp-content\/uploads\/2015\/04\/14572950665_aa2faba482_q.jpg\" alt=\"BOSS Members\" width=\"150\" height=\"150\" \/><\/a>pressure!\u00a0 All brews were acceptable.\u00a0 It was quite interesting to taste slight differences in the brews. Some of our members have temperature controlled freezers\/refrigerators for fermentation, while others had to use more primitive methods of maintaining target temperatures.\u00a0 There were also slight differences in mash temperatures.\u00a0 All-in-all, the brews fell firmly within the typical parameters of an imperial stout.\u00a0 A great time was had by all!<\/p>\n<p>After several months in the barrel, the stout was extracted.\u00a0 I was at an SCA event that weekend so my friend <a href=\"http:\/\/garyguinn.com\/\" target=\"_blank\">Gary Guinn<\/a> collected my 5 gallon share. The brew turned out to be very nice with most of the characteristics that we desired, but for one.\u00a0 While I was concerned about &#8220;over-oaking&#8221;, I believe we may have removed the beer a bit prematurely.\u00a0 The level of bourbon and oak flavor ended up being a little short of what I anticipated.\u00a0 Still, it is a great brew for a chilly evening while sitting around a campfire or in front of a fireplace.<\/p>\n<p>&#8220;Live and Learn!!&#8221;<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\">[slickr-flickr search=&#8221;sets&#8221; set=&#8221;72157644720736645&#8243; type=&#8221;slideshow&#8221;]<\/p>\n","protected":false},"excerpt":{"rendered":"<p>About a year and a half ago, our local brew club B.O.S.S.
