{"id":450,"date":"2015-03-11T11:12:57","date_gmt":"2015-03-11T16:12:57","guid":{"rendered":"http:\/\/www.socpsy.com\/casks\/?p=450"},"modified":"2015-03-11T12:54:23","modified_gmt":"2015-03-11T17:54:23","slug":"new-hybrid-lager-yeast","status":"publish","type":"post","link":"https:\/\/www.socpsy.com\/casks\/new-hybrid-lager-yeast\/","title":{"rendered":"New Hybrid Lager Yeast"},"content":{"rendered":"<p><strong>New Hybrid Yeast Used for Brewing<\/strong><\/p>\n<p>Hot off the press!!<\/p>\n<p>I intended to update my discussion in my previous post, <a href=\"http:\/\/www.socpsy.com\/casks\/adventures-in-yeast\/\" target=\"_blank\">Adventures in Yeast<\/a>, with the results of a study out of China. Several researchers found what they believe to be another source for yeasts that may crossed with ale yeasts to produce lager yeast.\u00a0 However, I just encountered a study in the<a href=\"http:\/\/link.springer.com\/journal\/10295\" target=\"_blank\"> Journal of Industrial Microbiology and Biotechnology<\/a> that is very exciting.\u00a0 Too exciting not to talk about immediately!\u00a0 Yes, I am a science geek!<\/p>\n<p>This study was authored by Kristoffer Krogerus and several colleagues and it is the first report of beer fermentation with hybrid yeast developed from combinations of <em>S. cerevisiae<\/em> (a traditional ale yeast) and <em>S. Eubayanus<\/em>, the yeast isolated in Patagonia.\u00a0 The latter was reported by Libkind and his colleagues in 2011. The significance of this finding is that <em>S. Eubayanus<\/em> may be the yeast that combined with traditional ale yeasts in Europe in the 15th century to produce cryrotolerant, lager yeasts.<a href=\"http:\/\/www.socpsy.com\/casks\/wp-content\/uploads\/2015\/03\/yeast11.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" size-thumbnail wp-image-429 alignleft\" src=\"http:\/\/www.socpsy.com\/casks\/wp-content\/uploads\/2015\/03\/yeast11-150x150.jpg\" alt=\"Yeast Cells\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<p>Krogerus, et al. found that these new hybrids performed quite nicely at traditional lager fermentation temperatures (about 12\u00b0C).
