{"id":1201,"date":"2017-08-25T09:19:25","date_gmt":"2017-08-25T14:19:25","guid":{"rendered":"http:\/\/www.socpsy.com\/casks\/?p=1201"},"modified":"2017-08-25T09:19:25","modified_gmt":"2017-08-25T14:19:25","slug":"beer-and-wine-and-cider-and-yeast-oh-my","status":"publish","type":"post","link":"https:\/\/www.socpsy.com\/casks\/beer-and-wine-and-cider-and-yeast-oh-my\/","title":{"rendered":"Beer and Wine and Cider (&#8230;and yeast), Oh My!"},"content":{"rendered":"<p>In previous posts, I wrote about the discovery of a yeast, <em>S. eubayanus<\/em> (See <a href=\"http:\/\/www.socpsy.com\/casks\/adventures-in-yeast\/\" target=\"_blank\" rel=\"noopener\">this post and those that follow<\/a>) . Genetic analysis suggests that <em>S. eubayanus<\/em> is the most likely candidate to have hybridized with <em>S. cerevisiae<\/em> to form yeasts that we now refer to as lager yeasts (<em>S. pastorianus or S. carlsbergensis<\/em>). Research suggests that this hybridization may have occurred in the 15th\/16th centuries in Bavaria that led to a revolution in brewing during which brewers began to produce lager beer as opposed to ales (a <a href=\"http:\/\/www.socpsy.com\/casks\/category\/brewing\/yeast\/\" target=\"_blank\" rel=\"noopener\">search of my site will lead to<\/a> many entries related to this issue).<\/p>\n<p>While much research is being directed at how and when this hybridization occurred, some researchers are testing the possibility that <em>S. eubayanus<\/em> may be a useful yeast by itself in the brewing process. I previously reported on a <a href=\"http:\/\/www.socpsy.com\/casks\/brewing-with-s-eubayanus-i\/\">study published<\/a> in <em>Zymurgy<\/em> in which a panel of brewers used <em>S. eubayanus<\/em> to brew classic beer styles that were then tested for flavor and other characteristics.<\/p>\n<p>In recent months, a several researchers published studies expanding this theme to wine and cider. I posted a note about the study by\u00a0Magalh\u00e3es, et al (2017) about a month ago in which <em>S. eubayanus<\/em> was tested in winemaking. \u00a0I finally received my copy of the study and can now report on its findings. \u00a0Another paper authored by\u00a0Magalh\u00e3es and his colleagues extends the use of <em>S. eubayanus<\/em> and its hybrids to cider-making. I recently obtained copies of these papers and will report on them in an upcoming blog entry.<\/p>\n<p>A third recent publication by Monerawela and Bond (2017) reviews the research to date regarding the possible origins of both <em>S. cerevisiae, S. eubayanus,<\/em> and their hybrids. \u00a0This is a complicated story of genetic diversity, or lack thereof in some cases, and human intervention that may have played a role in the current yeast strains we use today.<\/p>\n<p>It will take me a while to wade through these articles, but I will report back once I have digested their content!<\/p>\n<p style=\"text-align: center;\">References<\/p>\n<p style=\"margin-left: .5in; text-indent: -.5in;\">Magalh\u00e3es, F., Krogerus, K., Vidgren, V., Sandell, M., &amp; Gibson, B.
