Eubayanus as a Wine Yeast?"},"content":{"rendered":"<p><a href=\"http:\/\/www.socpsy.com\/casks\/adventures-in-yeast\/\" target=\"_blank\" rel=\"noopener\">In previous posts<\/a>, I wrote about the discovery of the yeast strain <em>S. eubayanus<\/em>, the likely candidate that produced a hybrid (with <em>S. cerevisiae<\/em>) that we now use in the production of lager beer. Genetic sequencing of the most widely used lager yeasts (S. <em>pastorianus\/S. carlsbergensis<\/em>) shows a 99%+ match with the non-<em>S. cerevisiae<\/em> component of these cold-tolerant yeasts (<a href=\"http:\/\/www.socpsy.com\/casks\/wp-content\/uploads\/2016\/02\/adventures-in-yeast.pdf\" target=\"_blank\" rel=\"noopener\">see my paper on this issue<\/a>). Historically, brewers used <em>S. cerevisiae<\/em> to produce ales that were fermented at higher temperatures. \u00a0However, sometime in the 15th\/16th centuries brewers in Bavaria began to produce beer at lower temperatures, reducing spoilage and producing a &#8220;cleaner&#8221; flavored beer that we now identify as &#8220;lager.&#8221;<\/p>\n<p>Many, if not most, researchers believe that this ability to ferment at cooler temperatures resulted from a <em>S. cerevisiae\/S. eubayanus<\/em> hybridization event or events. <a href=\"http:\/\/www.socpsy.com\/casks\/brewing-with-s-eubayanus-i\/\" target=\"_blank\" rel=\"noopener\">We are beginning to see researchers\/brewers consider the use of<em> S. Eubayanus<\/em> alone as a potentially viable industrial yeast for brewing beer.<\/a><\/p>\n<p>The latest publication related to the use of <em>S. eubayanus<\/em> for brewing diverges into wine-making.\u00a0Magalh\u00e3es, et al. (2017) published an article in the July issue of <a href=\"https:\/\/academic.oup.com\/femsyr\" target=\"_blank\" rel=\"noopener\">FEMS Yeast Research<\/a>\u00a0entitled,\u00a0<a href=\"https:\/\/academic.oup.com\/femsyr\/article-abstract\/doi\/10.1093\/femsyr\/fox049\/3950269\/Exploring-the-potential-of-Saccharomyces-eubayanus?redirectedFrom=fulltext\" target=\"_blank\" rel=\"noopener\"><em>Exploring the potential of Saccharomyces eubayanus as a parent for new interspecies hybrid strains in winemaking.\u00a0<\/em><\/a><\/p>\n<p>I have asked the lead author for a copy of this article and will report on the results once I get a chance to pour through it.<\/p>\n<p style=\"text-align: center;\">Reference<\/p>\n<p style=\"margin-left: .5in; text-indent: -.5in;\">Magalh\u00e3es, F., Krogerus K., Castillo, S., &amp; Gibson, B.
